History of ice cream evolution and the invention of the cone

The history of ice cream consumption and serving methods has evolved significantly from an elite luxury to a mass-market staple. In the late 18th century, ice cream was a privilege of the wealthy, exemplified by George Washington’s documented high expenditures on the treat.

As mechanical refrigeration made production more affordable in the 19th century, vendors initially used ‘penny licks’—small glass cups that customers licked and returned. However, concerns over hygiene and disease led to the banning of these vessels in London in 1898.

The modern ice cream cone emerged through various innovations. In 1902 and 1903, Italian immigrants Antonio Valvona and Italo Marcionni patented metal molds to create edible wafer cups in the United States. The iconic cone shape was popularized at the 1904 St. Louis World's Fair when Ernest Hamgui, a Syrian immigrant, began wrapping dough in a cone shape to assist a vendor who had run out of paper cups.
