Home Fermentation and Cooking Tips for Surplus Cucumbers and Zucchinis

A set of simple preservation methods helps households avoid waste when cucumber or zucchini harvests are abundant. For cucumbers, a lacto‑fermentation recipe calls for one litre of water, 30 g of salt and optional spices per kilogram of fresh cucumbers, with the mixture left at about 20 °C for five to seven days before refrigeration, where the pickles can keep for several months.

For zucchini, cutting the vegetables into sticks rather than rounds improves oven‑roasting by reducing water loss and yielding a tender interior with a crisp exterior; the vegetable is roughly 90 % water, and larger specimens release more moisture. An alternative anti‑waste use is a sweet jam made by pre‑cooking diced zucchini briefly in lightly salted water, then simmering it with 800 g of sugar, the juice of two lemons, a pinch of salt and zest for about 45 minutes, followed by a final ten‑minute boil after adding zest, reaching 100‑102 °C. The resulting jam can be sterilised in jars for long‑term storage.
