Homemade sauerkraut preparation and seasoning guide
Making homemade sauerkraut requires large, clean jars and physical effort to press the cabbage firmly so it releases enough juice for proper fermentation. While spices do not guarantee correct fermentation, they significantly impact the final flavor.
Recommended additions include two peeled garlic cloves per jar to sharpen the taste without overpowering the natural acidity. Bay leaves, allspice, and dried juniper berries are suggested for a spicy, forest-like aroma. Juniper should be used sparingly—no more than two berries per liter—to avoid bitterness. Other options include dill for freshness or caraway seeds as an alternative to juniper.
Salt is the essential foundation of the process. A ratio of 20 grams of rock salt per 1 kilogram of shredded cabbage is recommended to extract juice, support lactic acid bacteria, and inhibit undesirable microorganisms.
