Hungarian agriculture adapts to new processing technologies and economic shifts

The Hungarian agricultural sector is navigating shifts in both production technology and cultivation economics. To meet the rising demand for nutrient-rich, minimally processed snacks, innovative food processing methods are emerging. Microwave Vacuum Drying (MVSz) is highlighted as a solution to traditional hot-air drying, as it allows for moisture removal at lower temperatures (30-40°C). This process preserves vitamins, colors, and aromas while maintaining a crunchy texture without additives.

Simultaneously, root vegetable producers face significant economic and environmental challenges. While the vegetable sector has seen growth compared to fruit production, the total area dedicated to vegetable cultivation in Hungary has shrunk from 85,000 to 65,000 hectares since the turn of the millennium, turning the country into a net importer. Specific crops like carrots and celeriac maintain high self-sufficiency levels, but their cultivation areas have decreased by nearly one-third over the last decade. Rising input costs and declining producer prices have tightened profit margins, prompting experts to advocate for precision technology, improved plant protection, and post-harvest developments to maintain viability.
