Hungarian culinary heritage explored in new books
New literary works are exploring the depths of Hungarian culinary heritage and its cultural intersections.
Tamara Cserháti has released her third cookbook, ‘Mákosh’, which focuses on the fusion of Hungarian and Jewish gastronomy. The book draws from her family traditions, blending familiar flavors with Middle Eastern influences such as tahini and Eastern spices. It features a range of dishes from traditional matzah ball soup to contemporary creations like lentil salad with tahini.
In a separate exploration of food history, gastro-journalist Bori Ács has published ‘Elfelejtett magyar konyha’ (Forgotten Hungarian Kitchen). The work follows the efforts of 19th-century author Mór Jókai, who in 1862 expressed concern that many authentic national recipes were being lost to foreign influences. Ács aims to reconstruct and preserve these historical Hungarian culinary traditions.
