Il Duca di Orvieto revives Renaissance-era cuisine through historical research

Adler Bonaveraè has conducted over thirty years of historical research to revive Renaissance-era cuisine in the Umbria region. His restaurant, Il Duca di Orvieto, focuses on preserving 16th-century culinary traditions through the study of rare archival documents and oral histories.

The menu incorporates both peasant-style dishes, such as farro, legume, and vegetable soups, and more refined recipes. Bonaveraè emphasizes the use of traditional ingredients and methods to maintain the anthropological value of these ancestral recipes from the Alto Orvietano area.
