A new Roman-style trattoria, ‘Il fondino’, has opened in the heart of Macerata. Led by Andrea Chiocchi and Michele De Chiara, the establishment focuses on traditional family recipes combined with high-quality local ingredients.

Chiocchi, who gained culinary experience traveling through Argentina, Mexico, and the Antilles, chose Macerata to avoid the seasonal constraints of coastal locations. The restaurant emphasizes sustainability by using seasonal products and sourcing from local producers to respect natural cycles.
