India’s regional cuisines reimagined in fine dining

A new generation of chefs in India is reimagining regional culinary traditions through the lens of contemporary fine dining. This movement focuses on hyper-regional ingredients, traditional preservation methods, and local terroir to elevate overlooked community traditions.

In Himachal Pradesh, chef Pratik Sadhu operates Naar, a 16-seat restaurant dedicated to Himalayan cuisine. The menu changes every two months to reflect the region's six seasons, utilizing foraging, fermentation, smoking, and firewood cooking.

In Mumbai, chef Hussain Shahzad at Papa’s offers a tasting menu that combines fine-dining techniques with familiar flavors, featuring unconventional ingredients like weaver ants from Odisha and rabbit from Nashik. Meanwhile, Farmlore near Bengaluru utilizes its 37-acre family farm to drive a farm-to-table dining experience led by chef Johnson Ebenezer and partner Kaushik Raju.

This shift is being driven by younger diners whose tastes are increasingly influenced by international media, travel, and the Indian diaspora, creating a growing demand for sophisticated interpretations of local heritage.
