Instituto Politécnico Formosa researcher presents natural pigment study

Dr. Mariel Trinidad presented research conducted at the Instituto Politécnico Formosa during the XII National Food Congress in San Miguel de Tucumán, Argentina. The study focuses on obtaining natural pigments through aqueous extraction from chañar fruit (Geoffroeadecorticans) flour for potential use in food applications.

The research is part of a doctoral thesis in Food and Nutrition at the National University of Entre Ríos (UNER). It aims to utilize regional natural resources to promote food security and sustainable development by exploring the scientific and technological potential of local species.
