International Chef Day celebrates culinary heritage and professional roles
International Chef Day, observed annually on October 20, recognizes the professional contributions of culinary experts to culture, food security, and the transmission of traditional knowledge. Established in 2004 by the World Association of Chefs’ Societies (Worldchefs), the date highlights the evolving role of chefs, which now encompasses research, innovation, entrepreneurship, and sustainability.
Across various regions, chefs are using their craft to preserve local identities. In Chile, professionals are reclaiming indigenous ingredients like cochayuyo, piñones, and quinoa. In Ecuador, chefs are connecting contemporary techniques with regional flavors from the cloud forests to the Galapagos. In Colombia, the concept of regenerative cuisine is being used to foster food sovereignty and support small-scale producers.
The celebration also emphasizes the importance of culinary education and the responsible use of seasonal ingredients to address modern challenges such as food waste and environmental sustainability.
