International chefs remove farmed salmon from menus
More than 120 international chefs, including prominent figures such as Massimo Bottura and Angela Hartnett, have joined the ‘Off The Table’ campaign to remove Atlantic salmon from intensive open-sea farms from their menus. The group, which includes professionals holding over 90 Michelin stars, aims to protest the environmental and animal welfare impacts of intensive aquaculture.
Coordinated by the British organization WildFish, the initiative highlights several ecological risks. These include the spread of parasites like sea lice to wild populations, the dispersal of organic waste into marine environments, and the high resource consumption required for fish feed. The campaign notes that intensive farming may contribute to the significant decline of wild Atlantic salmon, citing a roughly 70% decrease in salmon populations in Scottish rivers since 2000.
