Ishimi Beer CEO Yamaguchi Appointed Guest Professor at Shimane University

Yamaguchi Gennou, president of the craft‑beer maker Ishimi Beer, has been appointed as a guest professor in the Department of Biological Resources Science at Shimane University. The partnership builds on the brewery’s “station‑inside” operation at the former JR Hako Station in Izumo, where the company extracts and cultivates local yeast strains for new beverages. The university, which is establishing a dedicated fermentation research lab, will work with Ishimi Beer and the prefectural industry‑technology center to study regional yeast, develop new products and provide practical brewing training to students aspiring to start their own businesses. Yamaguchi said the role will allow him to share hands‑on brewing expertise and support entrepreneurship among the next generation, while the university hopes the collaboration will help retain talent and stimulate the local economy of Shimane Prefecture.
