Italian Apricot Granita and Chocolate‑Coated Popsicle Recipes

A fresh apricot granita recipe calls for 420 g apricots, water, sugar, vanilla‑flavored sugar, lemon juice and fresh mint. The fruit is cooked down, strained, mixed with the flavored syrup, and frozen for at least five hours, with occasional stirring to break ice crystals, resulting in a creamy, aromatic summer dessert.

A complementary recipe for chocolate‑covered apricot popsicles follows chef Enrico Bartolini’s advice. It uses peeled apricots blended with a syrup made from mineral water, acacia honey, lemongrass or melissa, and vanilla bean, then frozen. The frozen fruit is dipped in a mixture of milk chocolate (gianduja) and dark chocolate, finished with flaky sea salt and pink peppercorns, and optionally garnished with vanilla‑infused seeds.
