Italian coffee industry explores premium blends and bakery innovation

The Italian coffee and bakery sectors are undergoing significant evolution, driven by consumer demand for experimentation and new flavor profiles. In the bakery sector, Corrado Scaglione, founder of Cerere – L’Atelier del Pane, has introduced the Pumpkin Nespresso Roll. This creation uses Nespresso’s Pumpkin Spice seasonal blend as an ingredient within the dough, reflecting a broader trend of integrating coffee into contemporary bakery products.

Market data indicates the Italian bakery sector has grown to over 46,800 active companies, with the bread market reaching a value of 16.1 billion euros by the end of 2025. Research suggests high consumer interest in coffee-infused baked goods, with two out of three respondents expressing a desire to try leavened products made with coffee dough.

Simultaneously, Lavazza is expanding its premium offerings through its 1895 line. In a notable shift for the specialty coffee segment, the company has introduced a single-origin 100 percent Robusta coffee. This move targets high-end pastry shops and fine dining establishments, challenging traditional industry norms that have historically focused specialty designations on Arabica varieties.
