Italian cuisine: Traditional antipasti and appetizer recipes

Italian culinary traditions feature a variety of antipasti, or appetizers, designed to be served in small portions. Common ingredients include sun-dried tomatoes, mozzarella, olives, basil, and Parma ham.

One notable preparation is 'funghi sott'olio', an exquisite porcini mushroom appetizer. The process involves boiling mushrooms in water with salt and white wine vinegar, allowing them to dry completely, and then preserving them in jars with garlic, bay leaves, rosemary, allspice, pepper, and high-quality olive oil. The mushrooms are ready to serve after two to three weeks of infusion.

Other classic Italian appetizers include various forms of bruschetta. Traditional versions feature toasted bread topped with diced tomatoes, basil, garlic, and oregano. Other variations include eggplant bruschetta with parmesan and chili, or a combination of tuna with goat cheese and gorgonzola.
