Italian culinary traditions: Arancini and Cacio e Pepe
Italian cuisine offers diverse traditional dishes ranging from Sicilian street food to Roman pasta classics. Arancini, named after the Italian word for small oranges due to their golden color and shape, are rice balls originating from Sicily. These snacks feature a crispy exterior, creamy risotto-style rice, and various fillings such as melted mozzarella, parmesan, and lemon zest.
Another staple is Cacio e Pepe, a Roman pasta dish defined by culinary minimalism. The recipe relies on the emulsification of starchy pasta water with finely grated hard cheese and toasted black pepper to create a creamy sauce without the use of cream or butter. To achieve a deep, resinous aroma, whole peppercorns should be crushed and toasted on a dry pan to release their essential oils before being combined with the pasta.
