Italian culinary traditions see new developments in regional products and recipes
Several developments in Italian gastronomy highlight the preservation of regional culinary traditions. In Veneto, the family-owned Salumificio MICAD has introduced a new Porchetta Trevigiana. This product is made using traditional artisanal methods, involving hand-tying and slow oven-roasting of selected pork legs seasoned with salt, pepper, and aromatic herbs. The recipe is free of additives, preservatives, gluten, and lactose, and is certified GMO-free.
In Emilia-Romagna, Mortadella Bologna IGP celebrated 365 years of history. Produced in several Italian regions including Emilia-Romagna, Lombardy, and Tuscany, the product is protected by the IGP status since 1998. The Consorzio Italiano Tutela Mortadella Bologna, representing 27 companies, manages its identity and promotion across 74 countries.
Additionally, the Dotta Confraternita del Tortellino has formally deposited the official recipe for tortellini broth at the Bologna Chamber of Commerce. This move aims to document the traditional preparation, which requires half a capon of at least five months old and one kilogram of beef (doppione). This follows a similar formal registration of the tortellini filling recipe in 1974.
