Italian pastry academies induct new master Fabio Ravone and host Iginio Massari workshop

On July 20, the Accademia Maestri Pasticceri Italiani (AMPI) held its examination session presided by Sal De Riso, inducting several new masters including Fabio Ravone. Ravone, founder of the Brindisi‑based artisanal bakery Dolci Creazioni, emphasized his commitment to quality over volume, stating, “I prefer to sell less but never betray my philosophy of quality first.”

Meanwhile, Rome’s Aromacademy, founded in 2015 by world‑champion pastry chef Davide Malizia, continued its focus on high‑level pastry education by hosting renowned maestro Iginio Massari. Massari led a course on “Ingredient balance and recipe formulation,” reinforcing the academy’s reputation as a hub for advanced pastry training in Italy.
