Italian pizza fritta traditions highlighted in Spain and Italy
Italian culinary traditions, specifically the art of 'pizza fritta' (fried pizza), are gaining attention through professional demonstrations and local successes. In Alicante, Spain, renowned pizzaiolo Franco Pepe participated in Alicante Gastronómica to showcase this southern Italian specialty. Alongside Raquel Perramón of Infraganti Pizza Bar, Pepe demonstrated how proper dough maturation and oil temperature control create a light, airy texture without excessive grease.
During the event, they prepared two distinct versions: one using local Alicante ingredients, such as mullet roe, and another featuring ingredients from Campania.
In Italy, the pizzeria Die’ Gustibussi has seen significant growth following its relocation to Giffoni Sei Casali. The establishment has gained recognition for its 'Pizza Fritta Circolare,' an award-winning specialty that utilizes recycled cuts of cured meats and cheeses to create a flavor profile similar to casatiello.
