Italian traditional snail dishes spotlight Tagliatelle and Sardinian monachine

Tagliatelle al sugo di lumache is a rustic Italian pasta dish that combines 600 g of egg‑tagliatelle with three kilograms of cleaned snails, tomatoes, garlic, chili, rosemary, sage and olive oil. The snails are washed repeatedly in vinegar and salt, boiled for about thirty minutes, then simmered in a slow‑cooked tomato sauce before being tossed with the pasta.

Monachine all’aglio is a simple Sardinian appetizer made with one kilogram of land snails, parsley, garlic, extra‑virgin olive oil, breadcrumbs, pecorino cheese, basil, vinegar and salt. After a purge of three to four days, the snails are washed, soaked in a salt‑vinegar brine, and then sautéed with garlic and parsley. The mixture is finished with grated pecorino and breadcrumbs and cooked gently until tender, served hot.
