Italian truffle producers call for menu transparency
In Italy, calls for greater transparency regarding the use of fresh truffles in the restaurant industry are being raised to protect consumers and local producers. Tartufo Abruzzo has issued an appeal for menus to clearly distinguish between authentic fresh truffles and industrial truffle-flavored sauces or condiments. While industrial products are legal, they often consist primarily of cultivated mushrooms, olives, and aromas, rather than significant amounts of real truffle.
Under EU Regulation 1169/2011, consumers have the right to clear information to avoid confusion. Advocates note that the high cost of fresh, seasonal truffles makes it economically impossible to offer dishes containing real truffle at very low price points, suggesting that low-cost menu items likely rely on processed seasonings.
In the Langhe region of Piedmont, the importance of seasonality and freshness is also emphasized. The white truffle of Piedmont is a highly seasonal product, particularly in autumn, which affects its aromatic profile and culinary use. Experts advise consumers to verify the variety, origin, and harvest period, noting that the aroma of fresh truffles diminishes over time after harvest.
