Italy revives traditional produce and seasonal culinary heritage
Italy is seeing a resurgence of interest in traditional and forgotten agricultural products, emphasizing the importance of biodiversity and seasonal eating.
In the Puglia region, summer cuisine is defined by seasonal vegetables such as tomatoes, eggplants, peppers, and zucchini, alongside local specialties like caroselli and barattieri. These vegetables, often harvested and consumed within hours, are central to the region's culinary identity and are frequently paired with extra virgin olive oil, as Puglia accounts for approximately 50% of Italy's national production.
Across the country, there is a growing movement to rediscover ‘forgotten fruits’—local varieties that were once at risk of disappearing due to the preferences of large-scale distribution. These include ancient apples, jujubes, azzeruoli, and corbezzoli. While these varieties often lack the uniformity required by modern supermarkets, they are being reclaimed by farmers and restaurateurs for their unique flavors and their role in preserving agricultural heritage.
