JA Zen-Noh introduces frozen cucumber plum hiyajiru recipe
JA Zen-Noh's Rice Department has introduced a recipe for ‘crunchy cucumber plum hiyajiru’ via its official X account. Designed as a refreshing meal for hot days, the recipe features a unique technique of using frozen cucumbers to act as ice, preventing the broth from becoming diluted.
The dish consists of rice topped with sliced frozen cucumber, myoga, shiso leaves, white ground sesame, and pickled plum, all served with a mixture of miso, tuna, grated ginger, and water. Hiyajiru is a traditional regional dish originating from the plains of Miyazaki Prefecture, historically eaten by farmers to cope with summer heat.
