Japanese mayonnaise drives record high sauce exports

Japanese sauce and condiment exports have reached record highs, driven significantly by the global popularity of Japanese-style mayonnaise. According to data released in August 2026, the export value of agricultural, forestry, and fishery products reached 1.7 trillion yen in 2025, marking 13 consecutive years of growth.

Japanese mayonnaise, characterized by a high yolk content that provides a rich, creamy texture and deep umami, has seen export volumes double over the last decade. This success is attributed to the global spread of Japanese cuisine—such as takoyaki and okonomiyaki—which has increased demand for authentic seasonings. Companies like Kewpie Corporation are leading this expansion by supplying over 60 countries and adapting products to local tastes, such as sweeter versions for the Chinese market.

The trend reflects a shift from merely exporting high-quality raw ingredients to exporting the fundamental flavors of Japanese food culture. Beyond direct exports, the influence of Japanese mayonnaise is driving the creation of "Japanese-style" products by domestic manufacturers in markets like the United States.
