Japanese regional ramen shops feature unique broth and toppings
Various regional ramen establishments in Japan are highlighting unique culinary offerings. In Matsuyama, Ehime Prefecture, a new restaurant named ‘Ramen Sanjyuushi’ opened on March 7, 2026. The shop specializes in a triple-flavor broth composed of beef, pork, and chicken, allowing customers to customize the intensity of the soup and select various toppings.
In Higashine, Yamagata Prefecture, the long-standing ‘Teuchi Ramen Benibana’ offers a distinctive ‘Miso Butter Potato Ramen.’ This dish features a significant amount of homemade potato chips—equivalent to approximately one to three potatoes—layered both on top of and within the bowl. The restaurant, which has been operated by the same owner for nearly 50 years, serves this unique combination alongside thick straight noodles and specialty chashu pork.
