Japanese researchers find unique fats in black and green rice

Japanese researchers have identified unique fats in black and green rice varieties that may help regulate blood sugar levels. The study, published in the journal Food Research International, examined 56 rice varieties from Japan.

Scientists discovered specific fats known as FAHMFAs in these colored rice grains for the first time. Although these fats account for only about two percent of the rice grain, they play a critical role in nutritional value by protecting cells and supporting bodily signaling.

Laboratory tests indicated that starch in black and green rice breaks down much more slowly than in white rice. This slower digestion results in a gradual release of sugar into the bloodstream, which can prevent sudden blood sugar spikes and potentially lower the risk of type 2 diabetes and cardiovascular diseases.
