Japan’s local ramen shops serve inventive regional specialties

In Setagaya, Tokyo, the popular ramen shop Chūka Soba Daifūtei draws crowds with its simple yet rich black‑soy‑sauce and clear‑salt broth ramen, both priced at ¥1,000, and stays open until 1 a.m. The venue also offers limited‑time dishes such as a garlic‑mayo pepper mixed noodle and a drink‑snack set after 3 p.m.

In Kakamigahara, Gifu Prefecture, the family‑run eatery Popoya has created an “okonomiyaki‑ramen” that layers a pork‑filled okonomiyaki on a hand‑crafted salt broth. Patrons wait for the pancake to absorb the soup, achieving a fluffy texture similar to akashiyaki. The dish is served with a blended okonomiyaki sauce and mayonnaise, and the menu also features a “soup‑yaki‑soba” that mixes the same salt broth with a wok‑fried noodle topped with a fried egg.
