Kagoshima seasonal autumn flavors feature Makomo-dake and sweet potatoes
In Kagoshima Prefecture, local producers are highlighting unique autumn seasonal foods. In Kirishima City, farmers are cultivating Makomo-dake, a vegetable from the Poaceae family rather than a mushroom. Grown in terraced rice paddies, it offers a crisp texture similar to asparagus and a mild sweetness that can be enjoyed raw. The cultivation of Makomo-dake is also being utilized to maintain rural landscapes and manage abandoned terraced fields.
In Kanoya City, a father-and-son duo is promoting innovative sweet potato products. Using varieties such as 'Kogane Sengan' and 'Beniharuka,' the family-run business 'Oimoya' offers unique gourmet items including 'Imo Dogs' (sweet potato-based corn dogs) and coffee-flavored roasted sweet potato shakes. The sweet potatoes are aged in high-humidity refrigeration for one month to increase sugar content before being roasted in large cauldrons.
