Spanish chef Karlos Arguiñano has shared technical advice for preparing perfect 'torreznos', a traditional Spanish pork belly dish. He emphasizes that the key to achieving the characteristic crunchy texture lies in the skin, which must not be removed during the cooking process.
Arguiñano recommends using thick slices of seasoned pork belly and frying them over low heat for approximately 10 to 12 minutes. This slow cooking method allows the fat to melt gradually while the rind dehydrates into a firm, crispy texture, preventing the meat from drying out before the skin is ready.
