Kayseri entrepreneur begins first saffron production in region

Entrepreneur Mustafa Demir has launched the first saffron production project in Kayseri, Turkey. Despite local beliefs that the region was unsuitable for the crop, Demir has successfully implemented an indoor cultivation model.

After initial attempts in open fields were hindered by climate instability—including frost, extreme temperatures, and irregular rainfall—Demir transitioned to a controlled indoor shelf system. This method currently manages 15,000 saffron bulbs, an amount that would typically require 2,000 square meters of land and approximately 30 workers if grown outdoors. The indoor system also provides protection against soil pests like moles.

Saffron is a high-value crop, with prices reaching 900,000 TL per kilogram. According to Ministry of Agriculture and Forestry records, total saffron production in Turkey averages around 100 kilograms annually.
