The Verbraucherzentrale Bayern explained the differences between traditional milk‑based kefir and milk‑free water kefir. Water kefir is fermented from sweetened water, dried or fresh fruit such as mango strips, and water‑kefir crystals. It contains no milk, offers a sweet‑sour taste similar to kombucha, and provides B‑vitamins, minerals and probiotic microbes. Both drinks may contain trace alcohol, typically 0.1‑2 % ABV. The “kefir mild” variant avoids alcohol by using bacterial strains that do not produce it, but it has a higher milk‑sugar level than regular kefir, which remains low enough for most lactose‑sensitive consumers.
