Kelly Whitaker commits to Oklahoma City via Nonesuch restaurant

Kelly Whitaker, head of Boulder-based Id Est Hospitality, is committing to the Oklahoma City restaurant scene through his ownership of Nonesuch, an award-winning fine-dining establishment in the Midtown neighborhood.

Whitaker, who operates acclaimed venues such as Wolf’s Tailor and Basta, emphasizes a strong sustainability ethos. Alongside Nonesuch executive chef Garrett Hare, he is focusing on regenerative practices, including the use of heritage grains and exploring heritage corn opportunities with local tribes. Whitaker noted that while Oklahoma is traditionally driven by oil and gas, the region's capacity for wheat production offers significant opportunities for creating demand through the culinary industry.
