Kitchen logistics and refrigeration planning for delivery services
When professional kitchens transition from on-site dining to delivery services, managing refrigeration space becomes a critical logistical challenge. Unlike stoves, which can run multiple shifts, cooling capacity is a finite resource that often becomes the primary bottleneck in production.
Effective planning requires determining peak volume, production timing, and the ratio of cold to dry storage. A common oversight is failing to allocate space for incoming deliveries, which can obstruct existing stock. According to data from Miljøstyrelsen, food waste in the restaurant industry totaled 75,634 tons in 2022, with food waste specifically estimated at 42,000 tons. A significant portion of this waste occurs during transitions where goods are stored incorrectly or for too long.
