Enzymatic browning is a natural chemical reaction that causes sliced fruits and vegetables, such as apples and potatoes, to turn brown or black when exposed to oxygen. This process is driven by an enzyme called polyphenol oxidase (PPO), which oxidizes phenolic compounds in the food's flesh once the cells are damaged by cutting.
While the discoloration can affect appearance, flavor, and texture, it does not necessarily mean the food has spoiled or is unsafe to eat. To prevent this, several kitchen methods can be used to limit oxygen contact or alter the pH levels of the surface. Submerging cut pieces in cold water is a highly effective way to slow browning. For enhanced protection, adding acidic substances like lemon juice can make the PPO enzyme less active due to the lower pH.
