Kitchen safety tips regarding rice preparation and aluminum cookware

Recent discussions regarding kitchen habits highlight the effects of using citric acid during rice preparation and the health considerations of using aluminum cookware.

Adding a few drops of lemon juice to rice water before cooking can improve the appearance of the rice. A slightly acidic environment helps limit oxidation on the surface of the grains, resulting in rice that appears whiter, shinier, and less prone to discoloration. However, this method does not significantly remove pesticides or heavy metals, and using too much can cause the rice to taste sour.

Regarding cookware, many households are transitioning away from aluminum pots toward stainless steel or glass. While aluminum is lightweight and cost-effective, cooking acidic foods—such as tomato sauce, tamarind, or vinegar-based dishes—in aluminum containers at high temperatures for extended periods can increase the amount of aluminum leaching into the food. Additionally, older or scratched aluminum cookware poses a higher risk of direct metal contact with food, making replacement a safer option for long-term use.
