Study Finds Kitchen Sponges Harbor Dangerous Bacteria and Recommends Safety Measures

A recent study by Germany's Federal Institute for Risk Assessment revealed that everyday kitchen sponges can host harmful bacteria such as Salmonella, Escherichia coli and Staphylococcus aureus. The porous structure of sponges, combined with moisture and food residues, creates an environment where pathogens multiply quickly and can survive even after the sponge dries. The researchers warned that contaminated sponges easily transfer bacteria to countertops, utensils and food, increasing the risk of cross‑contamination.

Similar findings were reported by NSF International, which identified high concentrations of coliform bacteria in more than 75 % of examined sponges. Both studies advise regularly replacing sponges, disinfecting them in water above 70 °C for at least two minutes, storing them in a well‑ventilated area, and using separate sponges or microfiber cloths for different cleaning tasks. The National Food Safety Agency of Moldova emphasized that unsafe kitchen hygiene contributes to a substantial share of the estimated 600 million annual food‑borne illness cases worldwide.
