KOBE Sushi & Rolls launches Manabí‑inspired menu in Ecuador
KOBE Sushi & Rolls introduced a new menu called “Manaba by Valentina Álvarez,” blending traditional flavors of Ecuador’s Manabí province with Japanese sushi techniques. The menu, created with chef Valentina Álvarez, features five dishes that reinterpret local recipes such as the Jipijapa Roll (inspired by ceviche), Cazuela Roll, and a shrimp‑sango soup, using ingredients like peanuts, sal prieta, corn, longaniza and sweet potato.
At the same time, Ecuadorian cuisine is reaching beyond the plate. Rio Store released a limited‑edition T‑shirt line that graphic‑designs iconic dishes such as encebollado, bolón and tigrillo. Separately, Lily Toy’s launched a plush‑toy collection modeled after popular foods, beginning with a bolón and humita, inspired by a 2025 visit to London’s Harrods.
Both initiatives aim to celebrate and promote Ecuador’s culinary heritage through innovative food offerings and consumer products.
