Kızılcahamam water buffalo use mud baths to escape heat

In the Kızılcahamam district of Ankara, water buffalo are using lakes and mud pools to cool down from the summer heat in the Kısamlar, Hıdırlar, and Sarıçam highlands.

Nutrition experts highlight the high quality of buffalo milk produced in these grazing areas. Professor Nevin Şanlıer, a faculty member in the Department of Nutrition and Dietetics, noted that buffalo milk is significantly richer in fat and protein compared to other types of milk. Specifically, 100 milliliters of buffalo milk contains approximately 4.5 grams of protein and 7 to 8 grams of fat, resulting in high energy content.

Due to its nutrient density, the milk is highly preferred for producing high-quality yogurt, cream, and butter. Professor Şanlıer also explained that the milk's distinct white color is due to beta-carotene being fully converted into Vitamin A during the process.
