La Maison de la Pistache unveils holiday collection and new cookbook
La Maison de la Pistache, based in Valensole, has announced a new festive collection for the holiday season and the upcoming release of a culinary book titled ‘Pistaches en Provence’.
The Christmas collection features premium pistachios sourced from Aegina, Greece, and La Mancha, Spain. The Greek Aegina AOP variety is noted for its deep green flesh and resinous notes, while the Kerman variety from Spain is highlighted for its aromatic intensity and organic cultivation.
Scheduled for publication on October 16, 2026, by Éditions de La Martinière, the book ‘Pistaches en Provence’ explores the history of the pistachio from ancient medicinal use to its modern cultivation in Provence. The work includes 30 recipes by Michelin-starred chef Nadia Sammut and features a preface by Olivier Baussan, the founder of La Maison de la Pistache, who has been working to reintroduce pistachio trees to the region since 2018.
