Lahmacun quality depends on ingredient selection and freshness
Determining the quality of lahmacun can be difficult for consumers because the cooking process often masks the freshness of vegetables and the specific origin of the meat. Experts note that once the product is baked, it is challenging to assess the quality of the ingredients used.
In Ankara's Hamamönü district, Harlı Fırın, a third-generation establishment, manages quality by focusing on ingredient selection rather than just kitchen preparation. Representative Anıl İdikut stated, “Quality control begins the moment we select the ingredients, not in the kitchen,” noting their preference for using lamb brisket from reliable butchers. The establishment's lahmacun has also been recognized on TasteAtlas’s list of the world's best lahmacuns.
