Languedoc wines and wild boar barbecue preparation

A selection of red wines from the Languedoc region is recommended for grilled meals. Featured wines include Abbotts et Delaunay 2024, which offers red and black fruit aromas with fine tannins, and Alma Cersius, Baron du Capiscol Merlot 2025, noted for its floral and dark fruit profile. Other options include Les Jamelles Pinot Noir 2024, characterized by a light and accessible profile, and Calmel & Joseph Épicurius 2024, which provides a rounder, simpler structure suitable for red meats.

For outdoor cooking, preparing wild boar leg on a barbecue requires specific techniques to ensure tenderness. Because wild boar is lean and muscular, it is recommended to use a generous marinade at least 24 hours in advance. The ideal cooking method is indirect heat at temperatures between 110 and 130 °C, with a cooking time of approximately 45 minutes to one hour per kilogram. Using a meat probe to reach an internal temperature of 68 to 70 °C is advised to prevent the meat from drying out.
