Las Flores hosts first CHARCA conference for artisanal charcuterie producers
The first CHARCA Conference, titled ‘Genetics and Charcuterie Tradition,’ was held in Las Flores, bringing together more than 110 producers, entrepreneurs, and industry leaders. Organized alongside the Civil Association of Artisanal Charcutiers, the event focused on sharing experiences and strengthening the development of the artisanal meat sector.
During the event, a Letter of Intent was signed with the National University of the Center of the Province of Buenos Aires (UNICEN) to enhance institutional cooperation. The gathering also marked the first anniversary of Resolution 350/2025 from the Ministry of Agrarian Development, a key regulatory framework for artisanal charcutiers.
Technical workshops were conducted throughout the afternoon, covering topics such as porcine genetics, sausages, spices, and bovine genetics. Representatives from the Ministry of Agrarian Development of the Province of Buenos Aires were also present to assist with inquiries regarding permits and registration under current regulations.
