Lausanne announces major changes for Beau-Rivage Palace and Sauvabelin Tower
The Beau-Rivage Palace in Lausanne has appointed French chef Simon Quétineau as its new head chef, succeeding Anne-Sophie Pic. Quétineau, currently at the Atelier Robuchon in Geneva, is scheduled to begin his role in the spring of 2027. The hotel stated this move is part of a new gastronomic development strategy focused on regional traditions and teamwork. Anne-Sophie Pic, who had led the kitchens since 2009, will depart on December 31.
Additionally, the Lausanne municipality has approved a major renovation or reconstruction plan for the Sauvabelin Tower. Built in 2003 with an expected lifespan of approximately 20 years, the 35-meter wooden structure requires significant work to ensure safety. The project, targeted for 2029-2030, aims to preserve the tower's iconic silhouette and wooden material. The city plans to hold an architectural competition and seek private funding to supplement municipal investments.
