Le Fumoir Smokehouse Opens in Fort Kent, Maine with Tex‑Mex and Southern Barbecue

Married couple Sean Russey, a Texan, and Kristin Laflamme, from Quebec, opened Le Fumoir, an artisan smokehouse in Fort Kent, Aroostook County, on Cinco de Mayo. The restaurant blends Tex‑Mex flavors with Southern barbecue, preparing all sauces in‑house and smoking meats for several hours. Its menu also includes smoked cretons, a traditional Acadian pork spread, and homemade salsa, chips, and smoked queso.

Le Fumoir occupies a multi‑use building that also houses the town post office, apartments and a medical office, replacing the longtime Doris’ Cafe that closed after the COVID‑19 pandemic. It joins a wave of new eateries in northern Maine, such as Cou‑yon’s Cajun Shack in Madawaska and the Northern Maine Kolache Co. in Van Buren, expanding the region’s culinary scene.
