Lobster dining and preparation trends in Maine and beyond

In Maine, Stewman’s Lobster Pound in Bar Harbor offers specialized dining experiences, including an all-you-can-eat lobster feast. This seasonal waterfront restaurant provides traditional Downeast-style meals, distinguishing its unlimited feast from its standard menu item, which features a single one-and-a-quarter-pound steamed Maine lobster.

Chef Bryan Voltaggio has also shared a specific method for preparing lobster rolls in his cookbook, ‘Home’. His technique involves soaking lobster meat in cooled cooking liquid to enhance flavor and remove residue, resulting in a sweet and briny texture. The recipe includes a custom ‘Trinity Sauce’ and a specialized ‘Our Bay Seasoning Blend’ to complement the seafood.
