Lobster's evolution from pauper's protein to luxury delicacy
Lobster has undergone a significant culinary transformation, evolving from a food once considered a staple for the poor to a high-priced luxury delicacy. In colonial America, lobster was so abundant that it was frequently used as fertilizer or fish bait, and was sometimes even restricted in the feeding contracts of servants and prisoners.
The shift toward its current status as a premium item occurred gradually throughout the 20th century, with a notable acceleration during the 1980s and 1990s. This change was driven by several factors, including dwindling supplies due to overfishing, increased global demand, and refined cooking techniques that elevated its perceived value.
As a budget-friendly alternative to expensive lobster, pollock can be prepared as a “poor man’s lobster.” This method involves using pollock fillets topped with breadcrumbs, lemon juice, butter, and paprika, then cooking them under a broiler to mimic the flavor experience of more costly seafood.
