Loiseau de Lorraine restaurant to open in Metz on September 15

The Loiseau de Lorraine gastronomic restaurant is scheduled to open on Tuesday, September 15, in Metz, France. Located at Place de Chambre near the cathedral, the establishment occupies a historic site that previously housed the Mojito Bar before a fire in April 2023.

Developed by Bérangère Loiseau, the project follows a nine-month renovation of the municipal space. The restaurant will feature approximately 50 seats and will be led by chef Vincent Gueret, a Metz native with experience at Michelin-starred Le Quai des Saveurs.

In addition to the dining room, the venue will include a pastry and chocolate boutique, marking the third such shop for the Loiseau group. The menu will highlight local Lorraine products, with lunch options such as the Jaumont menu starting at 40 euros.
