Lou Chambrone has transformed Canevari’s, a business established in 1929 in Sonoma County, California, into a local landmark. Originally a ravioli factory focused on frozen products and cold sandwiches, the establishment now offers an expanded menu of hot dishes including lasagna, polenta, and tiramisu.

Chambrone’s culinary background is rooted in his family’s history of running a butcher shop and restaurant in Utica, New York. After starting his professional career at the Disneyland Hotel in Anaheim, he gained experience in French cuisine, sushi, and various American regional traditions. His current approach blends Italian elements with creative twists, such as his ‘Italian Cubano’ sandwich, which features Calabrian pork, orange, fennel, and prosciutto.
