Ludwig‑Princeton study links plant diet to gut‑beneficial metabolites

Two recent studies led by Jenna AbuSalim and Joshua Rabinowitz at the Ludwig‑Princeton Institute, published in Proceedings of the National Academy of Sciences and Nature Metabolism, examined how plant‑based foods affect the gut microbiome. The research shows that plant fibers and proteins reprogram microbial metabolism, increasing the production of health‑promoting metabolites such as phenylpropionate and hippuric acid while suppressing potentially harmful compounds like p‑cresolsulfate and phenolsulfate.

The studies also reveal that many metabolites traditionally attributed to gut microbes are in fact largely produced by host (mammalian) metabolism. The findings suggest that dietary interventions could be used to steer the microbiome and its metabolic outputs, offering new avenues for therapeutic strategies across medical disciplines.
