Madonna Boschi to host traditional Salamina da Sugo festival

The traditional ‘Sagra della Salamina da Sugo al Cucchiaio’ is returning to Madonna Boschi in 2026. This gastronomic event celebrates one of the most representative food products of the Ferrara territory.

The 2026 edition is scheduled to run from September 18 through September 20, continue on September 25 and 26, and proceed from October 1 to October 4. Three additional evenings with limited seating are planned for October 9, 10, and 11.

The event highlights the Salama da Sugo IGP, a product with documented origins dating back to the Renaissance. Prepared with pork, red wine, and spices, the soft and aromatic ‘al cucchiaio’ preparation is central to the local identity of Poggio Renatico and the Alto Ferrarese region. The festival is organized by local butchers and Pro Loco volunteers to preserve these culinary traditions.
